In recent years, mezcal production has increased by 2.6% each year. That's why at Dos Cuerpos, we strive to raise consumer awareness about the mezcals they choose. Additionally, there are organizations that aim to support this same cause. But what is the CRM? The Consejo Regulador del Mezcal (CRM) is the only approved entity responsible for ensuring compliance with the NOM-070. In other words, they certify that the companies and brands producing and marketing mezcal in Mexico and abroad adhere to these regulations. Since the CRM was established, certifications are required for everything: agaves, production processes, holograms, etc. They are the ones who provide the certification seal, guaranteeing product regulation, safeguarding the mezcal's denomination of origin, and ensuring that they are safe for consumption.
Do you believe these types of organizations have made a positive impact? Do you think industrial mezcals truly maintain high standards in their large-scale production thanks to the CRM? Do you believe small producers receive support from these institutions?
At Dos Cuerpos, we focus on tastings and the distribution of agave spirits and Mexican wine. Tasting is the reflection of the alcohol being sampled, and in that sense, these texts aim to encourage continuous reflection.
