Mezcal Yavi

We invite you to try the new project we're working on at Dos Cuerpos, Mezcal Yavi. This project aims to bring together the finest mezcals from the Mixteca region (Puebla, Guerrero, and Oaxaca). In this area, the coexistence with numerous agaves occurred naturally, leading to the Mixtecos having a longstanding relationship with mezcal. "Yavi" translates to agave in Mixtec, which is where the project gets its name. Among the types of mezcals we offer are Espadín, Tobalá, Cuixe, Coyote, some distilled with poultry, and others with marijuana. These experiments honor pre-Hispanic recipes while maintaining a keen sense of innovation to uncover new ways of crafting mezcal.

Here are some photos from when we witnessed a clay pot distillation with fermentation in cowhide. It was baked on stone and crushed with wooden mallets. This process was carried out in the Ixcatlán region.

Palenque's mascot

The little goat you can see was rescued from the wild because some dogs separated her from her herd. She was left alone when she was still very young, but during the maguey harvest, the mezcal masters found her, and now she's the palenque's mascot :)
