Today we want to share with you the most successful mezcal at Dos Cuerpos this month. It's the Macario mezcal. A 100% Inaiquidens mezcal (a protected agave with 15 years of maturation), young, artisanal, and produced in Michoacán.
The name is inspired by the famous movie "Macario" from the early 20th century. It's a powerful film with messages that have shaped Mexican identity, especially in the mythical and desolate space of the frontier. It connects very well with mezcal, as in the movie, Macario faces three different characters who force him to question his identity, beliefs, and his own existence. This mezcal does the same after a few drinks. In the film, Macario questions the sense of belonging that modernism has brought. He understands that he doesn't own anyone, just as no one owns him, and that the only meaning of life is to share. Well, everyone will have their interpretation, what matters is the mezcal that adopted his name.
The mezcal we're sharing here understands the cultural importance of the agave and pre-Hispanic processes. When we talked to the master mezcalero, José Luis Sánchez Ybañez, he told us that he would distill during the full moon. He explained that the weather changes and that all natural processes are affected when the moon is in this phase. One of his daughters told us it was just a story, that her father was simply very mystical, but we wanted to do our research.
As we know, the moon has a direct relationship with various earthly aspects, from influencing the movement of currents, affecting the lives of corals and marine life, to stabilizing the Earth's rotational axis. Some even say it affects the sleep and blood pressure of terrestrial animals. We also know that, according to the Orpheus Theory, the moon was formed by the collision of a planet with ours, meaning the Moon is made up of bits of Earth. In conclusion, we really don't know if it's the mezcalero's mysticism, but we know the moon has mysterious origins and affects our lives in more than one way. So, with the idea that nature is perfect and everything is interconnected, it makes sense that distillation would be affected by the Moon. Or maybe, as the master's daughter says, it's just a story, but we like to think it's not.
Anyway, the Macario mezcal, with 41% alcohol content, is of low density, smooth, and light on the palate. It also has a subtle smokiness, hints of jasmine, and fruity aromas of banana and peach. We recommend pairing it with "ate" with cheese, or a similar dessert, or simply enjoying it as a digestive after a meal.
