Dos Cuerpos and Destilados Alambique



The agave is part of our pre-Hispanic heritage. This beverage of ancestral wisdom was complemented by the introduction of the copper still during the Spanish occupation, and since then, mezcal in Mexico has been mostly distilled using this technology, hence the name "Destilados Alambique" (Alambique Distillates). At Dos Cuerpos, in collaboration with Destilados Alambique, we work with great and renowned mezcal masters such as Hermógenez Vásquez, Jesús Sandoval, Fortunato Moreno, and Abundio Santiago. They are inheritors of invaluable knowledge about mezcal creation. These artisanal and traditional agave distillates are among the finest in Mexico for their quality and environmental consciousness, in contrast to any industrial mezcal. These distillates impress us with their complexity and balance in tasting notes, tones, flavors, and counter-flavors – factors that make our products the best artisanal mezcals in the country.



These mezcals, produced from Miahuatlán and Matatlán in Oaxaca to the Wirikuta desert in San Luis Potosí, are distinguished selections of the finest distillates, unique for the tasting experience. They come in diverse varieties such as 15-year-old Karwinskiis, 30-year-old Tepeztates, 8-year-old Salmianas, 4-year-old Angustifolias and Tequilianas, and many others. The selection of mezcals varies depending on production, out of respect for the agave and the entire biodiversity that depends on this succulent plant. These mezcals offer us the experience of various mezcal recipes that have been passed down from generation to generation for centuries – not only regarding the agave, but also the type of milling, cooking time, fermentation type, woods and water used, and even the distillation process.




Alongside this project, we have been able to maintain an honest production that takes responsibility for the environment, caring for the ecosystem entrusted to the agave (as seen in the loving relationship between the agave and the bat). The monthly rotation of mezcals at Dos Cuerpos also allows us to taste new species and flavors within the vast world of artisanal agave distillates with each cycle. Simultaneously, we avoid supporting industries that exploit certain agaves with the aim of selling and extinguishing these Mexican symbols. Here, we study the agave diversity of each area, the botany of each agave species, their maturation and reproduction processes, to offer mezcals that contrast the different historical flavors of each region.
