Cava 57


In San Juan del Río, Querétaro, at kilometer 173.6 of Highway 57, there emerges a vineyard built upon the dream and passion of its owner, Gino Parrodi. Cava 57 is a family winery with a delightful elegant and artistic atmosphere, crafting its wines since 2012 using exclusively estate-grown grapes. They have white grape varieties such as Chardonnay, Macabeo, Xarello, and Parellada to create their sparkling "Palomas" and their wine called "Independiente," which is their declaration of being a true independent winery. Among their sparkling lineup, all three share the same grape blend and method: Champenoise, but with varying residual sugar levels in each process – Brut Nature, Palomas Brut, and Palomas Semi, offering a hint of sweetness. On the other hand, they also cultivate Merlot, Syrah, Malbec, and Marselan to craft the complement to Dos Cuerpos, the rosé named "Dos Secretos," as well as the youthful red called "Tres Avisos" and a wine that lacks no spirit, "El Indomable." Out of these wines, four have won medals at the Brussels World Wine Competition: "El Indomable" and "Brut Nature" earned gold medals in 2017, the rosé secured a gold medal in 2018, and just last week, "Brut" was awarded a silver medal.




Querétaro, a region distinguished for its white wines, was supported by Lluis Raventos, honorary president of the Freixenet Group, to become a wine powerhouse. Cava 57 was one of the wineries sponsored by Freixenet and is now recognized as an authority in crafting fresh and acidic sparkling wines. This winery opens its doors for you to savor fresh wines, sit back, relish the Querétaro climate, taste their renowned sheep's cheese, and also invites you to partake in the vineyard experience – sampling the fruit before harvest and carrying crates to understand the value of a wine bottle.


Dos Cuerpos played a role in distributing and introducing the wines of this remarkable winery, but our paths have now diverged. This decision was made as the winery has gained the recognition necessary to no longer be considered a small artisanal project. Nonetheless, we wholeheartedly recommend them and wish them all the best in their future endeavors.
